With the expansion of all-day school provision, school is becoming the central living and experiential environment for children. As a result, tasks traditionally assumed by the family increasingly fall within the remit of schools. This also includes lunch catering, which is an integral component of the all-day school concept. Alongside the pedagogical and structural changes that the establishment of all-day operation entails, schools also face the major challenge of offering pupils a nutritionally complete meal at midday.
• But what does the current catering situation, and in particular lunch catering at all-day schools in Rhineland-Palatinate, really look like?
• What problems do schools face on a daily basis?
• What challenges must all actors involved in school catering confront, and what contribution can schools actually make in the fields of nutrition education, health promotion and prevention?
• Where might the opportunities lie in the further expansion of school catering?
The present documentation first examines the fundamental aspects of professional school catering in connection with questions of nutrition and consumer education in schools. Building on this, the central sections – method, results and discussion – of five relevant final theses in the field of nutrition and consumer education at the University of Koblenz-Landau, Campus Koblenz are documented. These deal with quantitative and qualitative questions concerning the current situation of lunch and snack catering in urban and rural areas and additionally document both the results of a survey of those responsible and data on pupil acceptance. In this respect, the present documentation contains a wealth of data and facts on the basis of which further positive development of school catering in Rhineland-Palatinate and beyond can be achieved.
