Chloramphenicol (CAP), a broad-spectrum antibiotic, is used both prophylactically and therapeutically in the treatment of food-producing animals. Because of its toxic properties, its use in animals intended for food production is banned throughout the EU and in many other countries, such as Canada and the USA. Repeated findings of CAP in shrimp and honey of Chinese origin led, on 30 January 2002, to an import ban on products of animal origin from China (Decision 2002/69/EC). Since chloramphenicol in honey represented a previously unknown problem, no validated method for the analysis of honey existed at that time that could determine chloramphenicol with the legally required selectivity and sensitivity. Decision 2003/181/EC established a minimum required performance limit (MRPL) of 0.3 μg/kg for analytical methods for the determination of chloramphenicol, so that methods for CAP analysis in honey must have limits of quantification of 0.3 μg/kg or lower. In the present work, three different methods for the determination of chloramphenicol in honey and in other bee products such as wax, royal jelly, pollen and propolis by LC-MS were developed. These methods are suitable for a high sample throughput in a routine laboratory and achieve the required minimum performance limit.
