Fair prices for food – at the latest since the milk strike of 2008, there has been debate about why milk can be sold in supermarkets more cheaply than some mineral waters. In contrast to the broad public discussion, relatively few economic studies dealing with the topic of fair prices have been published to date. The edited volume “Preise und Fairness in Wertschöpfungsketten” addresses this research gap, bringing together the findings of several extensive research projects on the subject.

The present book goes back to a conference held at the Georg-August-Universität Göttingen in 2012, at which scholars from various disciplines exchanged views on the possibilities and limits of fair prices for organic dairy products. The contributions are of interest both to researchers in the fields of agricultural sciences and economics and to practitioners in the food sector. They provide a comprehensive overview of the various options for improving value creation in the food industry.
