Consumer deception in the food sector is regarded as a highly relevant problem, both in media coverage and public debate and in the findings of numerous empirical studies. The present work approaches the phenomenon from an economic perspective, explicitly distinguishing between objective and subjective food deception. Various characteristics of the food market are identified that enable or favour cases of deception. Deficits are identified in existing state measures for protection against deception with regard to their incentive effects. Following a justification of the necessity of combating deception, the central determinants of the decisions of potential food deception perpetrators and victims are derived. Building on this, a comprehensive empirical analysis of deception-related consumer behaviour is carried out, taking into account both the protective and the punitive behaviour of food consumers. As a result of the work, various recommendations for action to improve deception-related consumer protection are derived.
