This dissertation addresses three challenging aspects in the authentication of berry fruits with regard to the profile of secondary plant metabolites. First, the influences of various extraction methods on the quantitative profile of anthocyanins, which are among the characteristic secondary plant metabolites of berry fruits, were investigated. The choice of different extraction solvents and techniques led to differing alterations of the natural anthocyanin ratios. Furthermore, the influence of enzyme preparations on the anthocyanin profile during juice production was examined. Here, too, the anthocyanin profiles showed varying alterations depending on the enzymes employed. Finally, knowledge of the phytochemical profile of several Vaccinium L. species was expanded by characterising iridoids previously unknown in these fruits.
